Welcome to Pollenzo
The university is located within the complex known as the Agenzia di Pollenzo, commissioned by King Carlo Alberto of Savoy beginning in 1832. The complex includes fourteen farmhouses, the main Agenzia building, a tower overlooking the church square, and the neo-Gothic parish church of San Vittore.
Action learning is an integral part of the educational experience at Pollenzo. Through study trips, field studies, company visits, and hands-on activities, students engage directly with food systems in their real-world contexts, meet industry professionals, and apply classroom knowledge to concrete situations. These experiences develop analytical and collaborative skills, as well as the practical preparation needed to operate within the global food system.
Sensory, Behavior and Cognition (SBC) Lab
The hub for sensory innovation: a state-of-the-art facility where taste, science, and research converge to advance our understanding of the food experience.
Pollenzo Food Lab
A multifunctional space where culinary practice meets gastronomic science, designed to experiment, conduct research, and develop expertise in the world of food.
Didactic Garden
A living laboratory for agroecology and sustainable food production, where students cultivate, research, and connect with the rhythms of the natural world.
Library and Study Room
A specialized resource center dedicated to gastronomic culture, offering an extensive collection of books, journals, and digital resources in support of study and research.
Le Tavole Accademiche
More than a university dining hall — a daily experience of conviviality, seasonal cuisine, and conscious eating, rooted in the values of Pollenzo.
La Banca del Vino
A unique wine museum and cellar housing over one hundred thousand bottles from Italy's finest producers, dedicated to preserving and celebrating the heritage of Italian wine.
